RICHARD REDDINGTON, CHEF & OWNER REDD, Yountville, CA
“I paired the Shiraz with a roasted duck breast we have on the menu, served with a swiss chard crepe, celery root puree and a sauce finished with bitter chocolate. The pairing was great; we picked up chocolate notes from the wine-- which was very well balanced. Next time, I'll pair it with braised meats, or a sauce that has some spice: cinnamon, nutmeg and clove.”
