Inspired by the great wines of Bordeaux, our Signature Cabernet Sauvignon exemplifies how meticulous attention to detail in the vineyard can result in powerful wines with extraordinary depth, character and poise. Grown in the cool climate of our estate vineyards in Southern Napa Valley and atop the rocky slopes of Mt. Veeder, our Signature Cabernet Sauvignon integrates rich and concentrated fruit with earth and spice.
TASTING NOTES
Enticing aromas of ripe black currant, blueberry and cacao introduce this bold, yet harmonious wine. A supple and focused palate reveals round flavors of juicy blackberry, cherry and espresso. Finely knit tannins prolong the elegant, poised finish that is accented by hints of cinnamon, cedar and nutmeg.
VINIFICATION
- Meticulous attention to detail in vineyard and minimal cellar handling
- Hand-harvested into small 28 lb. baskets
- Hand-sorted twice, before and after de-stemming
- Fermentation includes cold soaking for 4 days in a combination of opened top and traditional fermenters, with gentle pump-overs and extended maceration for optimal color extraction and tannin management
- Barrel lots were racked 2-3 times per year for clarity
